摘要：原桃胶是由桃树上分泌出来的浅红色黄色粘稠液体，经进一步干燥，粉碎为固体颗粒状，是一种浅红色黄色透明的固体天然树胶。
桃胶主要由多糖组成，包括半乳糖、鼠李糖、alpha;-葡萄糖醛酸，还有碳水化合物、脂肪和蛋白质等物质组成，具有清热止渴，缓解压力，养颜抗衰老，润肠道等功效。
桃胶在古代是一味中药，用于治疗石淋，血淋，痢疾。
如今桃胶因具有保养颜功效，与燕窝类似，为嫩肤养颜保健之佳品同时它也因此广泛应用于食品、医药、化妆品等行业，工业上将原桃胶作为粘合剂、增稠剂、稳定剂、乳化剂等。
本文就关于桃胶的加工处理及现代应用进行概括总结，以便为后续实验做好铺垫。

早在古代，《本草纲目》就有原桃胶的割胶与炮制记载，桃茂盛时，以刀割树皮，久则胶溢出，采收，以桑灰汤浸过曝干用[1]。
明姚可成《食物本草》中记载桃胶。
它具有味苦、平、无毒的特点，炼服，能保中不饿、和血益气、下石淋、止痛[2]。
桃胶还作为药材使用治疗一些病症，如（宋《太平圣惠方》止痛散中记录：桃胶半两，松脂、黄柏各半两。
